Ingredients
- 200 g rice (cooked)
- 1 bunch spring onions
- 2 small white onions
- 1 Mango
- 200 g Cherry tomatoes
- 0.5 lemon (juice)
- 4 tbsp mango juice
- 5 tbsp oil
- 1 tbsp basil (chopped)
- Salt
- 1 tsp curry powder
- curry powder (for sprinkling)
- mint (for garnish)
Instructions

Wash, trim and slice spring onions into diagonal rings.

Peel and finely dice or shave the onions.

Peel the mango, remove the pit and cube it.

Wash cherry tomatoes and quarter them.

Mix lemon and mango juice with oil, basil and curry; season with salt. Combine with remaining ingredients, taste, divide into bowls, sprinkle with extra curry powder, and serve garnished with mint.
