Rice Salad with Broccoli

Ingredients
- 250 g Basmati rice
- Salt
- 1 Broccoli
- 200 g tomatoes
- 1 untreated orange
- 1 tbsp mustard
- 5 tbsp olive oil
- pepper (ground)
- 1 pinch Piment d’Espelette

Cook the rice according to package instructions in salted water, drain, rinse and let cool. Meanwhile cut the broccoli into small florets, cover with a little salted water and blanch for about 3 minutes, then shock in ice water and drain well.

Remove stems from tomatoes, briefly plunge them in boiling water for about 30 seconds, rinse cold and peel off skins. Dice the flesh. Wash the orange hot and thinly peel its skin with a vegetable peeler. Slice into fine strips and blanch in lightly boiling water for about 5 minutes, then drain on paper towels. Squeeze out the orange juice.

Whisk together the orange juice, mustard and olive oil to make a dressing. Season with salt, pepper and chili to taste. Fold tomatoes, broccoli, orange strips and dressing into the rice. Serve chilled or at room temperature.
