Ingredients

  • 75 g Quinoa
  • 1 l vegetable broth (from the jar)
  • 2 beef tomatoes
  • 0.5 iceberg lettuce
  • 1 tbsp roasted hazelnuts
  • 3 tbsp olive oil
  • 2 tbsp fruit vinegar
  • 1 Garlic clove
  • chili powder
  • Salt
  • Pepper
  • 1 coriander sprig
  • peanuts (for garnish)

Instructions

    Add quinoa to boiling broth, season with salt and simmer covered for 15 minutes. Drain in a sieve. Slice iceberg lettuce into strips. Wash tomatoes and quarter them. Roughly chop the nuts.

    Peel garlic and blend with oil, vinegar, salt, and chili powder into a thick sauce. Mix quinoa, salad, tomatoes, and peanut sauce in a bowl; season with salt and pepper. Sprinkle coriander and garnish with peanuts.
