Rice Porridge with Mango

Ingredients

  • 200 g cooked whole grain rice
  • 200 ml coconut milk (or plant-based drink of choice)
  • 1 tsp coconut oil
  • 1 tsp ground cinnamon
  • 1 tbsp ground flaxseed
  • 200 g mango (fresh or frozen)
  • 1 Lime (juice)
  • 2 tbsp maple syrup (or honey)
  • 1–2 tbsp shredded coconut

Instructions

    Warm the cooked rice with coconut milk, coconut oil and a generous pinch of cinnamon in a pot, letting everything simmer for about 6–7 minutes. Stir in the flaxseed.

    Add mango pieces and finish by seasoning with lime juice, maple syrup and shredded coconut.
