Ingredients
- 200 g cooked whole grain rice
- 200 ml coconut milk (or plant-based drink of choice)
- 1 tsp coconut oil
- 1 tsp ground cinnamon
- 1 tbsp ground flaxseed
- 200 g mango (fresh or frozen)
- 1 Lime (juice)
- 2 tbsp maple syrup (or honey)
- 1–2 tbsp shredded coconut

Warm the cooked rice with coconut milk, coconut oil and a generous pinch of cinnamon in a pot, letting everything simmer for about 6–7 minutes. Stir in the flaxseed.

Add mango pieces and finish by seasoning with lime juice, maple syrup and shredded coconut.
