Ingredients

  • 20 walnut halves
  • 500 g chicory (3 chicories)
  • 2 oranges
  • 2 tbsp pomegranate vinegar
  • Fleur de sel
  • Cayenne pepper
  • 4 tbsp Walnut oil

Instructions

    Coarsely chop the walnuts and toast them in a small pan over low heat without fat until fragrant; let cool.

    Slice the chicory into strips about 2 cm wide, rinse under cold water in a sieve, and drain. Peel the oranges including the bitter white pith so the flesh is visible. Using a sharp knife, cut the orange segments between the membranes above a bowl to catch the juice.

    In a salad bowl whisk together 2 tbsp of the collected orange juice with the vinegar, fleur de sel, and a pinch of cayenne pepper until the salt dissolves. Fold in the oil. Add the chicory and orange slices and gently fold to combine.

    Distribute the chicory-orange salad onto four bowls and sprinkle the toasted walnuts on top.
