Rice Noodles with Tea and Bell Pepper

Ingredients
- 500 g rice noodles
- Salt
- 2 red bell peppers
- 2 tbsp Vegetable oil
- 1 untreated lemon (juice and zest)

- 4 Tbsp breadcrumbs
- 4 tbsp butter
- 1 tsp matcha tea powder (for sprinkling)

Instructions

Cook the rice noodles in salted water until al dente.

Wash, halve, clean and slice the bell peppers into strips. In a hot pan with oil, roast them sharply. Remove from heat, drizzle with lemon juice, season with salt and pepper, and let rest.

In a small pot, warm the zest of the lemon with the breadcrumbs and 2 tbsp butter until lightly golden brown.

Melt the remaining butter in a hot pan. Toss the drained noodles with a little cooking water and matcha tea. Season with salt, lemon juice and pepper, then distribute into bowls. Top the bell pepper strips with the lemon-breadcrumb mixture and sprinkle each with a pinch of matcha tea before serving.
