Ingredients

  • 300 g cherry tomatoes
  • 2 Avocados
  • 0.5 lemon (juice)
  • Salt
  • pepper (from grinder)
  • 12 slices baguette
  • 2 tbsp olive oil
  • 1 Garlic clove

Instructions

    Preheat the oven to grill mode.

    Wash, dry and quarter the tomatoes. Halve the avocados, remove the pit and loosen the flesh from the skin. Dice small and lightly mash with a fork in a bowl. Mix in lemon juice and season with salt and pepper.

    Place the baguette slices on a rack and drizzle with oil. Roast each side 2-3 minutes until crisp, then remove and rub with halved garlic clove. Spread the avocado cream on top and arrange the tomatoes over it. Season with salt and pepper and serve immediately.
