Ingredients

  • 300 g rice noodles
  • 500 g sirloin steak
  • 5 garlic cloves
  • 3 tbsp Fish sauce
  • 2 red chilies
  • 300 g green beans
  • 2 Celery stalks
  • 2 tbsp sesame oil
  • 4 tbsp light soy sauce
  • coriander leaves
  • lemon balm leaf

    Cut the beef into bite‑size strips and season with fish sauce. Let it marinate briefly. Peel and finely chop the garlic. Wash the green beans, cut them into small pieces and blanch in boiling salted water for 3 minutes. Drain. Wash the celery stalks and slice into strips. Wash the chilies, deseed and cut into rings.

    Cook the noodles in plenty of salted water and drain. Heat the oil in a large pan. Sear the beef until browned, then add the vegetables, garlic, and chili. Cook over medium heat for about 3 minutes. Add the rice noodles and soy sauce, stir well and cook another 1–2 minutes. Serve garnished with coriander and lemon balm leaves.
