Ingredients

  • 1 fresh ginger (about 5 cm piece)
  • juice of one lemon
  • 2 tbsp agave syrup
  • Salt
  • 0.5 tsp paprika flakes
  • 4 tbsp oil
  • 2 tbsp walnut oil
  • 1 bunch chives
  • 300 g rice noodles
  • lemon slice (for garnish)

Instructions

    Peel the ginger and grate finely. Mix ginger, lemon juice, agave syrup, salt, and paprika flakes, then whisk in the oils. Combine the chives with the dressing.

    Drain the rice noodles after boiling them in salted water for 3 minutes, rinse under cold water, drain well, and toss with the dressing.

    Serve in individual bowls and garnish with lemon slices.
