Radicchio-Pear Salad with Croûtons and Parmesan

Ingredients
- 1 clove garlic
- 1 Organic Orange
- 3 tbsp balsamic vinegar
- 1 tsp Honey
- 5 tbsp olive oil
- Salt
- Pepper
- 60 g whole grain baguette (4 slices)
- 10 g butter (2 tsp)
- 200 g radicchio head (2 heads)
- 1 pear
- 3 sprigs Mint
- 30 g Parmesan cheese (1 piece)

For the vinaigrette, peel and press garlic into a bowl. Wash orange hot, pat dry, grate zest into bowl. Squeeze juice and add balsamic vinegar, honey, and oil to bowl. Mix well and season with salt and pepper.

Cut bread into small cubes. Melt butter in a pan and fry bread cubes over medium heat until golden brown, turning occasionally. Remove and drain on paper towels.

Clean radicchio, rinse, dry, cut into bite‑sized pieces. Wash pear, quarter, core, slice thinly. Wash mint, shake dry, pluck leaves. Toss radicchio with half the vinaigrette. Arrange on 4 plates with pear slices and croûtons, drizzle remaining vinaigrette. Grate parmesan over top and garnish with mint before serving.
