Radish Salad with Duck

Ingredients
- 500 g radishes (with greens)
- 4 tbsp rapeseed oil
- 120 ml poultry stock
- Salt
- Pepper (freshly ground)
- 3 tbsp apple cider vinegar
- 1 tbsp Lemon Juice
- 1 tbsp pear syrup
- 300 g smoked duck breast fillet
- 200 g Gorgonzola
- 2 pears

Wash, trim, and cut the radishes into small pieces. Halve them and sauté briefly in 1 tbsp oil in a hot pan. Deglaze with stock, season with salt and pepper, cover and gently steam for about 10 minutes. Transfer to a bowl and let cool. Whisk together vinegar, lemon juice, pear syrup, remaining oil, salt, and pepper to make the dressing.

Slice the duck breast thinly. Cube the Gorgonzola. Wash the pears, quarter them, remove cores, then cut quarters into strips. Combine the radishes, duck slices, Gorgonzola cubes, and pear strips in the bowl with the dressing. Serve on deep plates.
