Fruitful Rice Salad with Mushrooms

A fruity rice salad with mushrooms from Spoonsparrow is always wonderfully good.

Ingredients

  • 300 g rice
  • Salt
  • 2 red bell peppers
  • 2 papayas
  • 200 g mushrooms
  • 3 tbsp grape seed oil
  • 2 tbsp Apple cider vinegar
  • 2 tbsp lemon juice
  • 1 tbsp freshly chopped parsley
  • pepper (ground)

Instructions

    Cook the rice according to package instructions in salted water. Let it cool. Wash, quarter, peel with a vegetable peeler and dice the bell peppers. Peel, halve, pit and dice the papayas. Clean the mushrooms, quarter them and sauté in hot oil for 2–3 minutes. Set aside to cool slightly.

    Combine the rice with the prepared ingredients, vinegar, lemon juice and parsley; season with salt and pepper.
