Ingredients
- 2 tbsp coarse wheat semolina
- 2 cups rice flour
- 1 tsp dry yeast
- 2 tbsp fine sugar
- 1 cup thick coconut milk
- 1 cup water (as needed)
- a pinch salt
- ghee (for frying)
- spices (optional, for serving)

Bring 2 cups of water to a boil in a pot and stir in the semolina. Keep stirring until it thickens. Remove from heat and let cool.

In a bowl mix rice flour with dry yeast, sugar, cooled semolina paste, and coconut milk, then whisk into a smooth dough. Add enough water to achieve a thick batter. Let the dough rest for about 20 minutes, then cook flatbread pieces (like pancakes) in a hot pan with ghee one at a time.
