Rice Casserole

Ingredients
- 2 sour apples
- Lemon juice
- 4 tbsp sugar
- 300 ml milk
- 100 g rice pudding
- 1 tsp grated lemon zest
- 2 Tbsp softened butter
- 2 eggs (separated)
- butter (for greasing the pan)
- 3 tbsp toasted almond kernels

Quarter the apples, peel and core them, then cut the quarters into crosswise slices. In a pot, bring lemon juice and two tablespoons of sugar to a boil. In another pot, bring milk and two tablespoons of sugar to a boil. Sprinkle in the rice pudding, add grated lemon zest, cover tightly and simmer over very low heat for 30 minutes, then let it sit on the turned-off stove for an additional 10 minutes.

Whisk the butter and yolks until fluffy, then fold in the rice pudding mixture.

Fold in the drained apple slices.

Beat the egg whites to stiff peaks and gently fold them into the rice mixture. Transfer to a greased baking dish and sprinkle with almonds. Bake in a preheated oven at 200°C for about 30 minutes.
