Rice Pudding with Berries

The rice pudding with berries from Spoonsparrow is a true soul warmer and brings many antioxidants.

Ingredients

  • 1 vanilla pod
  • 0.5 Organic lemon
  • 200 g rice pudding grains
  • 1 l milk (3.5 % fat)
  • 15 g coconut palm sugar (1 tbsp)
  • 1 pinch salt
  • 150 g raspberries
  • 150 g blackberries
  • 150 g blueberries
  • 150 g Strawberries
  • 300 g yogurt (3.5 % fat)

Instructions

    Slice the vanilla pod lengthwise. Wash the lemon in hot water, pat dry and peel a strip of zest with a paring knife (use the rest of the lemon elsewhere).

    Add rice, milk, coconut palm sugar, salt, vanilla pod and lemon zest to a pot and bring to a boil while stirring occasionally. Turn off the heat, cover and let the rice soak for about 30 minutes, stirring now and then.

    Meanwhile wash berries gently, pat dry and trim if necessary. Blend half of the berries with yogurt until creamy.

    Remove the vanilla pod and lemon zest from the pudding, divide into four bowls, and garnish with sauce and remaining berries.
