Ingredients
- 400 g long grain rice
- 80 g chopped herbs (chives, parsley, chervil)
- 150 g Pecorino cheese (grated)
- 2 Eggs
- Salt
- Pepper (freshly ground)
- oil (for the pan)

Bring the rice to a boil in twice the amount of lightly salted water and let it simmer gently covered for about 20 minutes until drained. Transfer the rice to a colander, allow it to drain, cool slightly, then transfer to a bowl.

Stir in herbs, eggs, and pecorino; season with salt and pepper. Brush a rectangular pan (approximately 15 x 30 cm) with oil, pour in the rice mixture, and smooth the top.
