Apple Thyme Tart

Ingredients

  • 225 g flour
  • 1 pinch salt
  • 50 g sugar
  • 125 g butter
  • 1 egg
  • 1 untreated lemon
  • 5 sour apples
  • butter (for the pan)
  • 3 tbsp thyme honey
  • 50 g butter
  • 2 tbsp thyme

Instructions

    Sift the flour onto a work surface and form a well in the center. Sprinkle salt, sugar, and add the butter pieces on top of the flour. Beat the egg into the middle and knead all ingredients into a smooth shortcrust dough. If necessary, add a little more flour or cold water. Wrap in cling film and chill for about 30 minutes.

    Squeeze the lemon juice. Wash, peel, quarter, core the apples and cut them into thin slices. Toss with the lemon juice.

    Preheat the oven to 180 °C fan‑fry. Butter the tart tin.

    Roll the dough into a square and line the tin, lifting a rim. Arrange the apple slices in a fan shape on the base. Drizzle the honey over them. Dot the butter in small flakes on top and bake for about 50 minutes until golden brown. Sprinkle thyme over the apples during the last 5 minutes.
