Rhubarb‑Strawberry Smoothie

Ingredients

  • 100 g Strawberries
  • 1 small organic lime
  • 2 tbsp low‑fat quark
  • 1 tsp Honey
  • 100 ml unsweetened rhubarb juice
  • Ice cubes

Instructions

    Wash and pat dry the strawberries. Set aside one large strawberry for garnish.

    Quarter the remaining strawberries and place them in a tall vessel.

  3. 3.

    Rinse the lime, dry it, grate its zest finely and put it on a plate. Halve the lime.

  4. 4.

    Press a glass lightly into a lime half and then into the grated zest to create a green rim.

  5. 5.

    Squeeze out one lime half, measure 2 tbsp of juice and add it to the strawberries (use the remaining lime elsewhere).

  6. 6.

    Add low‑fat quark and rhubarb juice, then blend well with an immersion blender. Taste with honey and pour over ice cubes in the prepared glass. Slice the reserved strawberry slightly and stick it on the rim.
