Ingredients
- 800 g rhubarb
- 80 g sugar
- 1 lemon (juice)
- 200 ml dry sparkling wine
- mint (for garnish)

Wash, trim, peel the rhubarb and cut into pieces; steam with sugar and 150 ml water for about 10 minutes until soft. Then blend and let cool.

Mix in lemon juice and sparkling wine, then place in the freezer for about 3 hours. Stir frequently with a fork to keep the mixture grainy; it should not become creamy like a sorbet.

Serve by filling chilled glasses and garnish with mint.
