Mirabelle Crumb Cake

Ingredients
- 1 cube yeast
- 250 ml milk (1.5% fat) (lukewarm)
- 650 g flour
- 60 g sugar
- 1 pinch salt
- 2 Eggs
- 175 g butter
- 60 g Honey (4 tbsp)
- 1 kg mirabelles
- 1 tsp powdered sugar

Dissolve the yeast in the milk. Add 80 g of flour and a pinch of sugar, mix into a thick batter, cover and let rise for 30 minutes.

Mix 420 g of flour with the remaining sugar and a pinch of salt, create a well, crack in the eggs and add 50 g of butter in chunks. Add the yeast mixture and work everything into a smooth dough. Cover and let rise for about an hour.

Meanwhile knead the remaining butter with the rest of the flour, a pinch of salt and honey to make crumbs. Wash and pit the mirabelles.

Knead the dough vigorously, roll it out and place on a baking sheet lined with parchment paper. Melt 25 g of butter in a pot and brush the dough with it. Top with mirabelles and sprinkle the crumbs over them.

Bake the cake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 30 minutes until golden brown.

Let cool and serve dusted with powdered sugar.
