Rhubarb Pancakes

Ingredients
- 150 g flour
- 2 Eggs
- 300 ml milk
- 300 g rhubarb
- butter (for frying)
- powdered sugar (for dusting)
- quark
- 250 g quark
- 50 g yogurt
- 80 ml milk
- 3 tbsp sugar-cinnamon mixture
Instructions

For the batter, whisk flour with milk until smooth, then fold in eggs. The batter should be thick and sticky; let rest for 15 minutes.

Wash, peel, and cut the rhubarb into pieces.

Sauté half of the rhubarb in a little butter. Pour half of the batter over it and cook about 3-4 minutes on moderate heat until golden brown, then flip and cook another ~3 minutes. Keep warm at 80°C in the oven and repeat with the second pancake.

Whisk quark with yogurt, milk, and cinnamon sugar until smooth and serve alongside the pancakes.
