Ingredients

  • 6 kiwis
  • 800 g rhubarb
  • 500 g invert sugar (2:1)

Instructions

    Peel the kiwis, weigh about 400 g of flesh and dice it into small cubes.

    Wash the rhubarb, remove the fibers and weigh about 600 g. Dice it similarly.

    Combine the diced kiwis, rhubarb and sugar in a large pot.

  4. 4.

    Bring to a boil while stirring, then simmer for about 4 minutes until bubbling.

    Perform a gel test; once set, fill clean jars completely with the mixture. Let them cool upside down.
