Relish with red onions and Balsamic

Ingredients
- 250 g plums (or red plums)
- 1 kg red onions
- 2 tbsp sunflower oil
- 1 tbsp honey
- 250 ml red wine
- 75 ml white balsamic vinegar
- 1 tsp mustard seeds
- 1 pinch cloves powder
- 1 pinch allspice
- Salt
- pepper (ground)

Wash the plums, halve them, pit and cut into wedges. Peel the onions, slice finely, and sauté in hot oil for 1–2 minutes. Add the plums with honey, red wine, vinegar, mustard seeds, cloves, and allspice. Simmer gently on low heat, uncovered, for about 45 minutes until thickened. Stir occasionally and add a splash of water if needed.

Season with salt, pepper, and additional vinegar to taste. Transfer into prepared jars, seal tightly, and store in the refrigerator.
