Refreshing Hummus

Ingredients

  • 350 g dried chickpeas
  • 3 cloves garlic
  • 2 lemons (juice)
  • Salt
  • 0.25 tsp cumin
  • 150 g tahini (jar)
  • 2 tbsp olive oil
  • 1 tbsp mint oil
  • 2 tbsp chopped mint
  • 100 g roasted light sesame seeds
  • 50 ml lemon juice
  • 1 clove garlic
  • 1 tbsp Olive Oil

Instructions

    Soak chickpeas overnight, then drain and simmer in a pot covered with water for about 40 minutes until tender. Drain into a colander and rinse under cold water. Puree finely with an immersion blender. Peel, chop, and grate the garlic cloves with salt. Add to the chickpeas and mix with tahini, lemon juice, cumin; season with salt and cover for 30 minutes in the refrigerator. Before serving, fold in mint oil and chopped mint. Serve by arranging the chickpea paste in bowls and drizzling a little olive oil on top.
