Ingredients

  • 4 slices whole grain bread
  • 400 g matjes
  • 2 shallots
  • 2 Tomatoes
  • 4 tbsp goat cheese (crumbled)
  • 2 tsp capers
  • 2 tbsp basil (finely chopped)
  • 2 tbsp olive oil
  • lemon juice (to taste)
  • pepper (ground)

Instructions

    Preheat the oven to 250°C with top and bottom heat.

    Roast the whole grain bread in the oven until golden brown. Drain the matjes well and finely dice them.

    Peel and finely chop the shallots. Wash the tomatoes, remove the stems, quarter them, deseed and dice. Combine the matjes, shallots, goat cheese, capers, basil, and olive oil gently, then season with lemon juice and pepper. Spread the mixture over the toasted bread slices and serve immediately.
