Matjes with Beet

Ingredients

  • 350 g beet
  • 10 matjes double fillets
  • 4 Tbsp mayonnaise
  • 2 tbsp Apple cider vinegar
  • Salt
  • pepper (ground)
  • 1 large apple
  • 100 g fresh horseradish
  • 1 box garden cress

Instructions

    Wash the beet and steam for about 50 minutes until tender. Let cool, peel, and cut into sticks. Rinse the matjes and pat dry. Arrange two double fillets on each plate. Slice the remaining beet into strips. Whisk together mayonnaise and vinegar. Toss the matjes and beet with the dressing, seasoning with salt and pepper.

    Peel the apple, quarter it, remove the core, and grate the quarters roughly. Grate the horseradish finely. Mix under the apple pieces. Spread the beet salad over the matjes, garnish with chopped garden cress, and serve with the apple-horseradish mixture.
