Red Wine Vegetable Soup

A fresh vegetable soup with red wine, featuring crisp carrots, onions, ginger and green asparagus in a savory broth.

Ingredients

  • 1 Carrot
  • 1 large onion
  • 20 g Ginger
  • 2 tbsp Rapeseed oil
  • 2 tbsp Tomato paste
  • 150 ml dry red wine
  • 400 ml vegetable juice (e.g., tomato, beetroot)
  • 400 ml vegetable stock
  • 250 g green asparagus
  • 5 tomatoes
  • Salt
  • Cayenne pepper
  • 1 tsp sumac

Instructions

    Peel the carrot and cut into 1-2 cm cubes. Peel the onion and slice thinly. Peel the ginger and grate finely.

    Heat the oil in a large pot and sauté the onion, ginger, and carrot. Stir in the tomato paste and cook briefly. Deglaze with wine, then add the vegetable juice and stock. Bring to a boil and simmer for about 5 minutes.
