Ingredients
- 1 onion
- 2 cm fresh ginger
- 500 g carrots
- 1 tsp sugar
- 2 tbsp butter
- 750 ml vegetable broth
- 1 tsp paprika powder (spicy)
- 100 ml heavy cream
- Salt
- Pepper
- 1 tsp paprika powder (spicy)
- 2 tbsp olive oil
Instructions

Peel and finely dice the onion. Peel the ginger and slice thinly. Wash, peel, and grate the carrots finely. Sauté the onions and ginger in butter. Add the carrots, sprinkle with sugar, and lightly caramelize. Pour in the broth, add paprika powder, and simmer for about 20 minutes until the carrots are tender.

Add the cream and puree the soup finely. If needed, let it reduce slightly more or add more broth.

Season with salt and pepper and serve in bowls. Mix the paprika powder with olive oil, drizzle over the soup, and serve.
