Vegetable Soup with Millet

Ingredients
- 100 g Millet
- 1 onion
- 2 tbsp sunflower oil
- 1 l vegetable broth
- 1 stalk leek
- 250 g White cabbage
- Salt
- ground pepper (from the mill)
- 1 tbsp chopped parsley

Wash the millet in a sieve under running water and drain. Peel and finely chop the onion. Heat the oil in a pot, sauté the onion cubes until translucent, add the millet and toast briefly, then pour in the broth, bring to a boil and simmer covered over low heat for about 15 minutes.

Wash and trim the leek, cut the white and light green parts into ~1 cm thick pieces. Remove the thick leaf strips from the cabbage, wash it and shred into strips. Add the vegetables to the millet after the initial 15 minutes and cook for another 6-8 minutes until done. Season with salt and pepper and serve sprinkled with parsley.
