Red Wine Sauce

Ingredients

  • 3 shallots
  • 1 Garlic clove
  • peppercorns
  • 1 tbsp butter
  • 2 tbsp flour
  • 150 ml red wine (herb)
  • 1 tbsp balsamic vinegar (rosso)
  • 300 ml meat stock (depending on dish)
  • Salt

Instructions

    Peel and finely dice the shallots and garlic, then sauté in butter. Add 1 tsp peppercorns, dust with flour, and lightly brown.

    Slowly pour in the red wine while stirring until a thick paste forms. Add remaining liquid and bring to a boil.

    Strain through a sieve, season with salt and pepper, and serve over meat.
