Red-White-Green Vegetable Cockatil

Ingredients

  • 800 g chopped tomatoes (canned)
  • 1 clove garlic (pressed)
  • Salt
  • freshly ground pepper
  • 1 tbsp Worcestershire sauce
  • 360 ml heavy cream
  • 60 g Parmesan (freshly grated)
  • 100 g basil pesto (from the fridge)
  • 50 g chopped pistachios
  • 6 basil leaves

Instructions

    Season the chopped tomatoes with garlic, salt, pepper and Worcestershire sauce and divide among six glasses.

    Whip the cream until stiff and split it into two equal parts. Mix the first part with parmesan and spoon over the tomatoes. Combine the second part with pesto, optionally tinting it greener with a few drops of food coloring, and spread over the parmesan foam. Sprinkle chopped pistachios on top and garnish with basil leaves. Chill until serving.
