Ingredients

  • 1 kitchen-ready Red Snapper (ca. 2 kg)
  • Paprika peppers (one small red and one green each)
  • 1 onion
  • 2 Garlic cloves
  • 4 tbsp butter
  • 2 tbsp chopped coriander leaves
  • 1 tsp whole cumin
  • 0.5 tsp Fennel seeds
  • 0.5 tsp grated orange zest (unprocessed)
  • 120 ml freshly squeezed orange juice
  • 8 black olives (pitted)
  • Salt
  • pepper (ground)

Instructions

    Quarter the paprika peppers, remove seeds, clean and dice the flesh very finely. Peel the onion, peel the garlic cloves, and finely chop both. Slice the olives into strips. Heat two tablespoons of butter and sauté the paprika, onion, and garlic until softened.

    Add cumin, fennel seeds, orange zest, and juice; season with salt and pepper and simmer for two minutes. Preheat oven to 200°C (392°F).

    Line a large, shallow casserole dish heavily with the remaining butter, place the fish inside, and pour the sauce over it. Sprinkle olives on top. Bake the fish for 40 minutes, basting occasionally with the sauce. Serve sprinkled with coriander.
