Rice Noodles with Shrimp and Bean Sprouts

Ingredients
- 200 g thin rice noodles
- 150 g raw peeled giant prawns
- 1 onion
- 4 Spring Onions
- 150 g soybean sprouts
- 2 red chili peppers
- 3 cloves garlic
- 3 Tbsp plant oil
- 2 tbsp oyster sauce
- 2 tbsp fish sauce
- 1 Lime
Instructions

Soak the rice noodles in lukewarm water for 10 minutes, drain and cut into ~5 cm pieces. Rinse shrimp, pat dry. Peel onion and slice thinly.

Halve chili peppers, deseed, wash and finely chop. Wash spring onions and cut into large pieces; rinse soybean sprouts under hot water. Peel garlic cloves and mince finely.

Heat oil in a wok, sauté garlic and chili, add shrimp and season with oyster and fish sauce. Add drained noodles and stir-fry for about 4 minutes.

Add vegetables and cook everything else for another 3 minutes. Cut lime into wedges, arrange noodles on bowls and garnish with lime slices.
