Ingredients
- 4 Red Snapper fillets (≈180 g)
- 200 g diced pineapple (fresh or canned)
- 1 stalk leeks
- 1 tsp grated ginger
- 0.5 chopped chili pepper
- 2 tbsp oil
- 2 tbsp butter
- 0.5 lemon (juice)
- 2 tbsp Soy sauce
- 2 tbsp sherry
- 1 tsp Honey
- chopped chives for garnish
- Salt
- Pepper
Instructions

Wash and pat the fish dry.

Wash, trim, and cut leeks into diagonal rings.

Heat oil and butter in a pan and sear the fish on both sides for about 2 minutes each. Remove and bake in a preheated oven at 100°C (fan) for about 10 minutes to finish cooking.

Sauté ginger and chili in the same pan. Add pineapple and leeks and sauté briefly. Deglaze with lemon juice and sherry. Simmer for about 4 more minutes, then season with honey, salt, and pepper.

Plate the Red Snapper over the pineapple-leek relish and sprinkle with chives before serving.
