Baked Trout

Ingredients
- 3 EL olive oil
- 4 trout fillets (about 180 g each)
- Salt
- Pepper
- 120 ml dry white wine
- 2 untreated lemons
- 80 g sugar
- 50 g Pine nuts
- 1 handful parsley
- 1 handful chervil
- 150 g crème fraîche

Preheat the oven to 200°C with fan and grill.

Brush four oven-safe ramekins with oil. Rinse the fillets, pat dry, cut into three pieces each. Season with salt and pepper and place side by side in the ramekins. Drizzle with remaining oil and pour wine over. Bake for 10-15 minutes.

While the fish cooks, wash lemons, trim ends, and cut into small pieces. Boil sugar with 200 ml water, add lemon pieces, simmer for 2-3 minutes, then lift with a slotted spoon into a bowl. Chop pine nuts. Rinse herbs, shake dry, pluck leaves and roughly chop. Mix herbs with pine nuts and lemon.

Remove fish from oven, spread crème fraîche over it, season with salt and pepper, top with lemon-herb salad. Return briefly to the oven until heated through and serve.
