Ingredients
- 250 g smoked trout fillet
- 100 g mango chutney
- 2 tbsp horseradish
- juice of one lime
- Salt
- Pepper
- 100 g Soft Butter
- 10 pumpernickel slices
- 3 kiwis

Finely chop the smoked fish and whisk with mango chutney and horseradish. Add butter and season with lime juice, salt, and pepper.

From each pumpernickel slice cut out about 20 flower shapes.

Peel the kiwis, cut out flowers, and place them on the carved pumpernickel discs.

Spoon the smoked fish cream onto the plates using a zigzag spray nozzle and garnish with pink pepper.
