Ingredients

  • 2 small onions
  • 1 red chili pepper
  • 700 g young carrots
  • 1 tbsp butter
  • 4 tbsp raisins
  • 2 tsp Curry powder
  • 120 ml carrot juice
  • 60 g red lentils
  • 50 g chopped almond kernels
  • 3 stalks coriander
  • 1 tsp Honey
  • 1 tsp lemon juice
  • Salt

Instructions

    Peel the onions, halve them and cut each half into 4–5 wedges. Wash, deseed and trim the white membranes of the chili pepper, then dice it small. Peel the carrots and cut them lengthwise in halves.

    Heat butter in a pot until foamy. Add the vegetables and sauté them.

    Meanwhile wash the raisins, pat dry and add to the pot. Stir in curry powder and pour in carrot juice. Add lentils and cook everything over medium heat for about 15–20 minutes.

    While the curry simmers, toast almonds in a dry pan until fragrant. Wash coriander, shake dry, chop leaves and add them with the almonds to the curry. Season with honey, lemon juice and salt, ladle into bowls and serve.
