Ingredients
- 4 kg currants
- 2 l water
- 2 kg sugar
- 1 packet canning aid (sufficient for about 5 kg)

Clean, wash, and thoroughly dry the fruit, removing stems. Place in a large pot with water and crush slightly with a potato masher. Bring to a boil and simmer for 2-3 minutes. Mash again with the masher. Pour the mash through a sieve lined with cheesecloth into a bowl to let the juice drain.

Stir the extracted juice with sugar and bring to a second boil. Skim off any foam. Then stir in the canning aid into the finished, no longer boiling juice. Immediately fill prepared bottles to the brim while hot. After cooling, seal with a pre-heated cork and store cool.
