The Radish and Cucumber Salad from Spoonsparrow is delicious and lands on the plate in no time – the perfect summer side dish!
Ingredients
- 1 cucumber
- 100 g radishes
- 250 g Cherry Tomatoes
- 80 g arugula (2 handfuls)
- 1 box garden cress
- 4 tbsp white balsamic vinegar
- 6 tbsp Olive oil
- 1 tbsp Maple Syrup
- Salt
- ground pepper
Instructions

Peel the cucumber and slice or shave into thin rounds. Wash, trim, and similarly slice or shave the radishes.

Wash the tomatoes and quarter them. Rinse the arugula, spin dry, trim, and let drain well. Arrange the prepared ingredients with the sliced cress on plates.

For the dressing combine balsamic vinegar, maple syrup, salt, and pepper. While stirring constantly, whisk in the olive oil until well blended. Drizzle the dressing over the radish and cucumber salad and serve.
