Mixed Salad

The mixed salad from Spoonsparrow is light and refreshing, suitable as a side dish or main course!

Ingredients

  • 300 g mixed salad (e.g., romaine lettuce, radicchio, Lollo Rosso, frisée, arugula)
  • 1 Red Onion
  • 150 g Mushrooms
  • 6 Radishes
  • 1 red-skinned apple
  • 3 bell peppers (red, yellow and green)
  • 4 Spring Onions
  • 5 tbsp olive oil
  • 3 tbsp light balsamic vinegar
  • Salt
  • black pepper (freshly ground)

Instructions

    Wash, trim, dry, and tear the salad into bite‑sized pieces. Peel the onion and slice it thinly. Clean the mushrooms and cut them into slices. Wash, trim and slice or shave the radishes thin.

    Wash the apple, quarter it, remove the core, and cut into narrow wedges. Wash the bell peppers, halve them, remove seeds and white membranes, and slice into narrow strips. Wash, trim and cut the spring onions into rings.

    Whisk together olive oil and balsamic vinegar; season with salt and pepper to taste.

    Combine all salad ingredients with the vinaigrette, toss gently, arrange in a bowl, and serve.
