Ingredients
- 1 kg red cabbage
- 2 Apples
- 50 g clarified butter
- 1 tbsp sugar
- 1 onion
- 1 bay leaf
- 2 cloves of mace
- 2 tbsp Red wine vinegar
- 0.125 l red wine
- 0.125 l water
- Salt

Remove the outer leaves from the cabbage, cut the head in half, remove the core and slice into fine strips.

Wash the apples, quarter them, remove the seeds, peel and chop small. Heat clarified butter in a pot, add apple pieces, sprinkle with sugar and lightly caramelize. Add the cabbage and sauté everything together. Peel the onion, pierce it with the spices and place it on top of the cabbage. Pour in vinegar, wine and water. Cover and simmer over low heat for 40 minutes. Season with salt. Remove the spiced onion before serving.
