Pork Fillet Stir-Fry

Ingredients
- 400 g pork fillet
- 4 Tbsp sunflower oil
- 1 pack ramen noodles (frozen)
- 2 shallots (sliced thinly)
- 100 g peppers (red and yellow sliced into strips)
- 80 g mushrooms (sliced)
- 130 g pak choi (cut into strips)
- 60 g Butter
- 1 tbsp chopped coriander
- 1 tsp ginger (thinly sliced)
- 125 ml oyster sauce
- 50 ml chicken broth
- 2 tbsp blossom honey
- 2 tbsp hoisin sauce (dark plum sauce)
- 2 tbsp rice vinegar
- 1 tbsp sherry
- 1 tsp Chinese curry powder
- 1 clove garlic (finely minced)
- 2 tbsp sesame oil
- 1 tsp Raw Sugar

Slice pork fillet into thin strips and marinate with sunflower oil. Briefly blanch noodles in boiling water for 30 seconds, drain and rinse with cold water.

Combine all sauce ingredients together.

Heat a pan and quickly sear the pork strips until just browned, remove and keep warm. In the same pan sauté vegetables and mushrooms, mix in the seasoning sauce, then stir in the noodles. Add butter and ginger, fold in the pork. Finish by sprinkling coriander and ginger slices before serving.
