Red Berry Pudding

Ingredients
- 200 g red currants
- 100 g black currants
- 200 g strawberries
- 100 g sour cherries
- 100 g sugar
- 0.5 l red currant juice
- 2 tsp cornstarch (more if needed)
- 2 sprigs mint (for garnish)
- 100 ml heavy cream (at least 30% fat)

Set aside four stems of red currants, then strip the remaining stems with a fork and wash. Clean the strawberries and sour cherries, removing pits from the cherries.

Place the fruit in a pot, sprinkle with sugar, add the juice, and bring to a boil. Simmer for a few minutes, then thicken with cornstarch mixed in cold water.

Fill bowls with the pudding and refrigerate. Before serving, garnish each bowl with one currant stem and mint sprigs, dust with sugar, and pour over whipped cream.
