Ingredients

  • 30 g goji berries (2 tbsp)
  • 45 g cashew nuts (3 tbsp)
  • 300 g pre-cooked, vacuum‑sealed red beet tubers (3 pieces)
  • 1 Garlic clove
  • 0.5 lemon
  • Salt
  • Pepper
  • 0.5 tsp ground cumin (or coriander)
  • 40 g firm goat cream cheese (2 tbsp; 30% fat in solids)

Instructions

    Soak goji berries and cashew nuts in lukewarm water for 15 minutes.

    Meanwhile, roughly cube the red beet tubers. Peel and finely chop the garlic. Squeeze juice from half a lemon.

    Drain the soaked goji berries and cashews, then blend them with the beet cubes, garlic, and lemon juice using an immersion blender until smooth. Season the puree with salt, pepper, and cumin, then stir in the goat cream cheese.
