Ingredients
- 2 red bell peppers
- 4 tbsp olive oil
- 500 ml vegetable broth
- 200 g Wild rice
- Salt
- 2 tbsp freshly chopped parsley
- pepper (ground)
- 4 Red Barbel fillets (about 140 g each)
- 1 tbsp coarsely chopped thyme

Wash, trim and dice the bell peppers. Sauté in 2 tbsp hot oil for a short time. Deglaze with some broth and add the rice. Season with salt and cover; simmer for about 40 minutes, adding more broth if needed. The liquid should be fully absorbed when done. Fold in parsley and season with salt and pepper.

Rinse the fish fillets, pat dry, season with salt and pepper, and brown them in the remaining oil in a non-stick pan for 1–2 minutes. Sprinkle thyme over them, flip, remove from heat, and let them finish cooking. Serve together with the rice.
