Ingredients
- 8 redfish fillets (about 100 g each)
- 8 Cherry tomatoes
- 500 g small green bell peppers
- 1 Shallot
- 1 Garlic clove
- 1 tbsp butter
- 1 tbsp Tomato Paste
- 0.5 tsp Sugar
- Salt
- black pepper (freshly ground)
- 2 tbsp Lime juice
- 2 tbsp seed oil
- lime wedge for garnish
Instructions

Wash the tomatoes and quarter them. Wash the bell peppers, halve them and remove seeds.

Peel and finely dice the shallot and garlic.

Heat butter in a pan, sauté the shallot and garlic, stir in tomato paste and sugar, add the bell pepper, simmer gently for about 7 minutes, then add the tomatoes and heat through. Season with salt and pepper.

Season the redfish fillets with salt and pepper and drizzle lime juice over them, then sear each side in hot oil in a pan for about 1 minute per side.

Arrange the vegetables on preheated plates, place the redfish fillets on top and serve with lime wedges.
