Red and Yellow Beets in Honey Marinade

Ingredients

  • 800 g red beets (yellow and red)
  • 0.5 stick cinnamon
  • 0.5 tsp Fennel seeds
  • 0.5 stick licorice root
  • Salt
  • 2 tbsp liquid honey
  • 1 tbsp Lemon Juice

Instructions

    Wash the red beets, place them in a small pot and cover almost with water. Add the cinnamon stick with fennel seeds, licorice root and ½ tsp salt. Bring everything to a boil. Cook over medium heat for about 40 minutes.

    Drain, cool under cold water, peel and cut into slices or wedges.

    Preheat the oven to 220°C (425°F) with upper and lower heating.

    Mix the beets with honey and lemon juice, spread on a baking sheet lined with parchment paper and roast in the preheated oven for about 10 minutes. Serve plated on a dish.
