Ingredients
- 1 kg Brussels sprouts
- 2 red onions
- 2 EL plant oil
- Salt
- Pepper
- 100 ml apple juice
- 100 ml Vegetable broth
- 80 g dried soft dates (pitted)
- 1 EL freshly chopped thyme
- 1 splash Lemon juice
- 1 TL honey
- a pinch cumin

Remove the outer leaves of the Brussels sprouts. Wash and halve them lengthwise. Peel, halve, and slice the onions into strips. Sauté both in hot oil in a pan for 4-5 minutes until golden brown. Season with salt and pepper. Deglaze with juice and broth, cover, and simmer gently for about 6 minutes, stirring occasionally. During the last 2-3 minutes, remove the lid again.

Pit the dates and slice them into strips. Add the thyme to the vegetables. Season everything with lemon juice, honey, cumin, salt, and pepper, then serve.
