Ingredients

  • 700 g pork fillet
  • Salt
  • Pepper (freshly ground)
  • olive oil
  • 2 tbsp medium-hot mustard
  • 0.5 orange (zest only)
  • 3 tbsp chopped pine nuts
  • 3 tbsp freshly chopped parsley
  • 2 tbsp freshly chopped thyme
  • 500 gnocchi (from the fridge)
  • 300 g diced tomatoes (canned or packaged)
  • 1 Garlic clove
  • 1 tsp Honey
  • 1 tsp tomato paste
  • a splash lemon juice

Instructions

    Preheat oven to 180°C with fan and top heat.

    Wash pork fillet, pat dry, season with salt and pepper, then sear in olive oil on all sides. Remove and spread mustard over the surface. Mix orange zest with pine nuts, thyme, and parsley, then coat the meat in this mixture. Place on a greased baking sheet and bake for 30-35 minutes.

    Meanwhile cook gnocchi according to package instructions.

    For the tomato sauce, peel and finely chop garlic, sauté in olive oil. Add tomato paste briefly, then add tomatoes. Simmer gently for about 5 minutes, seasoning with honey, lemon juice, and salt.

    Drain gnocchi onto plates, pour sauce over them, top with sliced pork fillet and serve.
