Raw Vegetable Salad with Nuts

Ingredients
- 50 g white cabbage
- 1 small kohlrabi
- 1 Carrot
- 2 Radishes
- 1 small red onion
- 2 tbsp peanut kernels
- 1 Green Chili Pepper
- 2 tsp Honey
- 3 tbsp Lime juice
- 1.5 tbsp peanut oil
- Salt
- ground black pepper
- 0.5 bunch finely chopped parsley
Instructions

Clean the white cabbage and finely shave it. Peel the kohlrabi and carrot, slicing both into thin sticks. Wash the radishes thoroughly and shave them into slices. Peel the onion, halve it, and cut into very thin strips. Roast the peanut kernels in a dry pan over medium heat until fragrant, set aside to cool, then roughly chop. Deseed the chili, remove the white membranes, and slice into very thin rings.

Whisk lime juice, chili, honey, oil, salt, and pepper together; taste and adjust seasoning.

Combine all salad ingredients, fold in the dressing, let it rest briefly, then sprinkle with parsley before serving.
